We do pancakes a lot in this house. I love making them for some reason. I think it’s because I feel like I am baking, but it’s really quick and easy. Plus, pancakes are like dessert for breakfast and how can that be wrong?
There is something satisfying about making pancakes from scratch especially if they are buttermilk. I don’t know what it is, but I love using buttermilk. I think that it channels my inner farm girl…or maybe it’s my inner southern girl. It does make your baked goods taste extra rich and tangy, but there is something more. I just haven’t completely figured it out yet.
So you don’t have any buttermilk in your fridge? No problem! There are two ways that you can make it on your own. One is a more practical way. The second way is just kind of fun and a great exercise to do with your kiddos. I bet some of you have done this before, but you may not have realized that you were making buttermilk. My mom used to do this with her kids when she taught nursery school.
Here are your two options:
1. This is the practical and simple way. Get a measuring cup and add 1 tablespoon of lemon juice or white vinegar. Fill the rest of the cup with milk. Let this mixture sit for about 5 minutes. Easy peasy, right? You can then use whatever amount you need for your recipe.
2. This is the fun way to make buttermilk, but it might mean a trip to the grocery store. Get some heavy whipping cream. The less pasteurized the better. Put the cream in a mason jar and screw the lid on really tight. Shake the jar vigorously for about 5-6 minutes and it will start to separate. Eventually it will completely separate and you will have a solid (butter) and some liquid (buttermilk.) It’s fun for the kids to take turns shaking the jar. They can keep peeking to see if any of the solids have formed. After a while the kids might get bored and leave you alone to shake…so be ready to get some exercise. Which is good if you are going to eat a bunch of pancakes:-). The butter is wonderful and you will definitely want to save this, too. Just rinse the buttermilk off with some cold water and add a little bit of salt.
So there you go! I guess I could add a third option and that would be to go to the store and buy some already made:-)

- 1 1/4 cups all-purpose flour
- 1 egg
- 1 1/4 cups buttermilk
- 1/4 cup white sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup vegetable oil
- Splash of vanilla
- Pinch of pumpkin pie spice
- Heat skillet over medium heat. Combine all ingredients in a blender until smooth.
- Pour pancakes onto the griddle and when edges begin to brown flip and cook for a minutes or two more.
