This is a great dish to have with country ham and it is another one of my mother-in-law’s recipes. We made this for Christmas and it was soooo yummy. We had it last year and I was very happy that she said it was on the menu again this year.
There is something comforting about warm fruit…like warm applesauce. Adding some spice to the dish makes it irresistible…to me anyways. I don’t even love cherries that much but in this dish I was picking them out because they were so yummy. I actually bought everything that goes into this at Trader Joe’s last weekend because I want to make this again. I just hope my family will eat it too, because it makes a pretty big batch.
The curry is such a great flavor and we even cut back a bit on the butter and the brown sugar. I want to cut back on it even more when I make it next time. I think the warm fruit juices and the spices give this dish plenty of flavor, so I am excited to see how light I can make this dish without sacrificing the flavor. I will let you know how that goes.
Hot Curried Fruit
- 1 can pineapple chunks drained (reserve some of this juice
- 1 can pitted cherries drained
- 1 can pear halves drained
- 1 can peach halves drained
- 1/2 cup brown sugar
- 1/4 cup butter melted
- 1 tsp curry powder
- 1 tsp cinnamon
- Combine fruit in a 2 quart baking dish that has been sprayed with cooking spray.
- Combine butter, sugar and spices.
- Pour over fruit and bake covered in a preheated oven @ 350 degrees for 35 - 40 minutes until heated through and bubbly.
