Mexican Eggs and Tater Tots

This isn’t really a recipe, but it was an awesome breakfast concoction that Jim and I came up with last week after church, so I thought I would share. We were heading to the movies right after lunch so we were looking for something quick (and yummy.) Jim grabbed a bag of Trader Joe’s Tater Tots and put them into the oven and then cracked some eggs. We chopped up some tomato, avocado, green onions and cilantro. Jim scrambled the eggs. I have a hard time cooking two things – rice and eggs. I have no idea why, but Jim seems to do better with both so I just let him.

Does anyone else love Tater Tots as much as I do? There were three school foods that I remember liking.

1. Tater Tots
2. Apple Crisp
3. Chocolate Chip Cookies

I can’t remember anything else, but for some reason all three of those were big hits. I still to this day wonder what went in the chocolate chip cookies that made them taste so good. I remember the cheese on the pizza was really weird….and the Sloppy Joe’s were definitely questionable. Nothing like these sloppy joe’s or this pizza.

So here is how we put these Eggs and Tater Tots together. You could do this with one of those hash brown patties, too. Lots of layers in this dish which I love – so much flavor.

This is per person what you will need

8-10 Tater Tots cooked per package directions
1.5 to 2 eggs – scrambled in a little oil or butter (we use Smart balance)
1/2 plum tomato
1/5 avocado
green onion
jalapeño (we were out so I put some (lots of) pickled jalapeño on top

Chop the tomato, avocado, cilantro, green onion and jalapeño into a medium dice. Place the tater tots on each plate. Spoon the eggs on the tots and then add the tomato, avocado, cilantro green onion and jalapeño.

You could also add cheese or bacon to this dish, but in all honesty you don’t really need either. The tater tots are a bit of a high calorie (with little nutrients) splurge (152 calories for 8 tots) so adding the cheese and bacon takes this dish from one that isn’t too bad calorie-wise to one that is a high calorie splurge. Balance, right? It’s up to you. If you are going to make something like this for a special breakfast then go for it with the bacon and cheese. I won’t lie, it would be amazing. But if you are having this for a normal breakfast then try it the way that I did. You will love it and won’t miss a thing.

Plus, eggs are good for you! The cholesterol is the good kind (HDL) and they are a great source of protein (which helps with weight management and building muscle.) They are also an excellent source of Vitamin D which helps to fight some types of cancer, reduce inflammation and boost your immunity (for more info on Vitamin D, this is a great article.) So, like anything, eat them in moderation, but definitely don’t completely exclude them from your diet because you are counting calories. They have too many good qualities!


Also – if you are looking for a good family movie, I recommend The Secret World of Arietty. It is a sweet story and the animation is gorgeous. It’s a slower paced movie (with lots of Asian influence) than kids are used to these days, but the girls (plus a friend) loved it. It had some funny parts and it the story line was just great. Amy Poehler and Will Arnett are the voices of the parents. Bridget Mendler is Arietty and David Henrie is Shawn, the little boy. If you have kids that watch any Disney Shows or movies you will know who Bridget and David are. Carol Burnett is also one of the voices which was fun to listen to.

  7. Wow! Now that is a breakfast plate! I’d go make that right now except I’m fresh out of avocado and tater tots. A splash of Cholula and I’d be all over that. Yep, I love tater tots too. Have you ever had them cooked wrapped with bacon and sprinkled with BBQ rub? Mmmmmm.
