So we have had quite the wintry week here in North Carolina.
As a Yankee in the south let me first say that the amount of snow that falls in the south cannot be judged against the amount of snow in New York. When 6 or more inches fall in New York it may or may not make the evening news. I mean, even a small county in New York has a fleet of snow plows and sanders that start treating roads hours before a snowfall arrives. Since it only snows once or twice a year in North Carolina we just don’t have the plows or equipment to get rid of the snow and even worse, the ice. So when it snows there is really just no way to remove it except to wait for it to melt. When they cancel school before snow even starts falling in the south I get it. I don’t really want people who aren’t used to driving in the snow driving my kids home….or other kids for that matter.
So, our schools have been canceled since Tuesday and my girls have had the time of their life playing in the snow – and now the mud since it has mostly melted. They have been playing behind our house in the creek where they aren’t allowed to play in the summer because of snakes and ticks. They have literally been outside playing from 9am until dinner time. Their cheeks are red and they are exhausted by dinnertime. There have been no electronic devices on during the day and no arguing over how long someone has had the tablet. It has been wonderful. I just hope when the weather turns warmer (it is supposed to be in the 60’s tomorrow) they remember that they can still play outside. Southern kids are funny like that.
When the weather gets cold and the snow strands you in the house I can’t think of a better dinner than homemade pizza. This White Spinach Pizza is a great alternative to your typical pepperoni pizza. The creamy ricotta and melty mozzarella have such a nice flavor – particularly with a homemade crust. If you have never made your own homemade pizza crust you should give it a try. It does call for yeast, but the recipe I use dooesn’t require all the kneading and proofing. It is as easy as can be!

- 1 1/2 cups Ricotta Cheese
- 1 1/2 cups shredded Mozzarella Cheese
- Salt, pepper and Garlic Powder to taste
- 2 Tablespoons Olive Oil
- 1 10 oz bag baby spinach
- 1 cup crumbled feta cheese (optional)
- Preheat oven to 425 degrees
- Bake crust and the brush lightly with olive oil
- Mix the Ricotta, Mozzarella and seasonings until well combined. Set aside.
- Spread the Ricotta mixture evenly over crusts. Sprinkle with feta and then spread the spinach evenly on top.
- Bake for 10-12 minutes until cheese begins to slightly brown.
