Thai Style Curried Chicken Salad

Ingredients
  • 2 cups of chopped chicken
  • 2 tablespoons mayo
  • 2 tablespoons low-fat yogurt
  • 1 tsp curry powder (more if you really like Curry)
  • 1 tablespoon orange chutney (or marmalade if you don't have chutney)
  • Handful of Thai Basil - cut in a chiffonade
  • dash of salt and pepper to taste
Instructions
  1. To make your dressing combine the mayo, yogurt, curry powder and chutney. Whisk to combine and then pour over the chicken. Toss with the basil and then add salt and pepper to taste.
