Fresh Strawberry Pie

This is another one of my mom’s recipes. Such a great way to use fresh strawberries.  You can use a store bought crust to make this super simple or a homemade crust just makes this even more irresistible!

This is a great treat for your Memorial Day BBQ.  Have a great weekend everyone!

Fresh Strawberry Pie
 
 

Recipe type: Dessert

Ingredients
  • 4 cups strawberries
  • 1 prepared pie crust (we usually use a graham cracker crust, but a pastry crust would work well, too)
  • 1½ cups water
  • ¾ cup sugar
  • 2 tablespoons cornstarch
  • 3 oz. package strawberry jello
  • Freshly whipped cream

Instructions
  1. Cut stems off strawberries and leave whole or at least in large pieces. Place in pie shell.
  2. Combine water, sugar and cornstarch and cook over medium heat, stirring constantly until it comes to a boil. Continue on low heat for 2 minutes until it thickens and is clear.
  3. Add jello to mixture. Stir and pour, while hot, evenly over strawberries. Chill until set.
  4. Serve with freshly whipped cream

Hot Curried Fruit

This is a great dish to have with country ham and it is another one of my mother-in-law’s recipes. We made this for Christmas and it was soooo yummy. We had it last year and I was very happy that she said it was on the menu again this year.

There is something comforting about warm fruit…like warm applesauce. Adding some spice to the dish makes it irresistible…to me anyways. I don’t even love cherries that much but in this dish I was picking them out because they were so yummy. I actually bought everything that goes into this at Trader Joe’s last weekend because I want to make this again. I just hope my family will eat it too, because it makes a pretty big batch.

The curry is such a great flavor and we even cut back a bit on the butter and the brown sugar. I want to cut back on it even more when I make it next time. I think the warm fruit juices and the spices give this dish plenty of flavor, so I am excited to see how light I can make this dish without sacrificing the flavor. I will let you know how that goes.

Recipe type: Side Dish

Ingredients
  • 1 can pineapple chunks, drained (reserve some of this juice
  • 1 can pitted cherries, drained
  • 1 can pear halves, drained
  • 1 can peach halves, drained
  • ½ cup brown sugar
  • ¼ cup butter, melted
  • 1 tsp curry powder
  • 1 tsp cinnamon

Instructions
  1. Combine fruit in a 2 quart baking dish that has been sprayed with cooking spray.
  2. Combine butter, sugar and spices.
  3. Pour over fruit and bake covered in a preheated oven @ 350 degrees for 35 – 40 minutes until heated through and bubbly.

Mahi Mahi with Pineapple Jalapeno Salsa

With the holidays coming up I am trying to keep our dinners light and somewhat fresh this month.  We have had grilled chicken, veggie omelets and this mahi mahi. My goal for this month is when I am not eating cookies or cake I am eating something healthy. It’s called balance, people:-).

We also have a birthday.  My oldest, Ella, turns eight today and I just can’t believe it.  Eight is kind of not so little anymore.

Eight means two more years and she is in double digits (and she has reminded me of that a few times.)  Eight means that she wants to redecorate her room with peace signs and glitter and not teddy bears and bows.  Eight means she is almost halfway through elementary school, when it feels like she just started.  It means if I am wearing something that she doesn’t like she will tell me what I should wear instead (and there is a good chance I will take her advice.)  Eight also means sleepovers, which is probably the most scary item in this list…especially when it is SIX girls at my house.  Seriously, I am stressing.

So, you can see why I am posting recipes like this in the middle of December.  I need some lightness in my life.  I also need to make it to the gym at least four days a week, which is tough right now.

The shining star of this recipe is the pineapple salsa.  The Mahi is a great fish, but this salsa is such a great recipe.  If you have never had pineapple salsa change that right now.  Make this.  If you like sweet heat this is probably the best sweet heat you will ever taste.   We had veggie burritos earlier in the day on Sunday and Jim threw some in his burrito and he said the salsa was awesome in it.  You could also just eat it with some chips – cause it’s salsa and that’s what you do with salsa.

If you have read this blog for any period of time, you probably know that I am a huge fan of Trader Joe’s.  Well, they have the best pineapple and they are usually 2.99, which is a great price.  If you have an Aldi’s I think you can usually get them really inexpensively there, too.  Did you know that Aldi’s and Trader Joe’s are owned by the same company? TJ’s also has great and reasonably priced frozen fish which is where this Mahi is from. I think Aldi’s has good frozen fish, too….it’s all making sense now:-).

Pineapple is also great to add to a stir fry.  Amazing, really.

So try this salsa today.  Add a ton of jalapeno and – Enjoy!

Mahi Mahi with Pineapple Jalapeno Salsa
 
 

Recipe type: Main

Ingredients
  • 1 lb Mahi Mahi
  • 2 Tablespoons butter
  • 1 Tablespoon EVOO
  • ½ lemon
  • 2 cups pineapple diced
  • ½ red onion diced
  • 1 good handful cilantro
  • 2-3 jalapenos seeded and diced
  • a good squeeze of fresh lemon or lime juice
  • 1 tablespoon of Teriyaki sauce (optional)
  • Salt to taste
  • Sriracha (optional)

Instructions
  1. Heat butter and EVOO in a skillet over medum high heat. Pat fish dry and salt and pepper on both sides. Place fillets in the skillet and cook about 3 minutes on each side.
  2. Remove fish from pan and squeeze lemon juice in with the butter and cook for one more minute. Spoon butter over fish if desired.
  3. For salsa add pineapple through Teriyaki sauce and mix until combined. Add salt to taste.
  4. Spoon salsa over fish. Drizzle with Sriracha if desired.
  5. Enjoy!

Fried Apple Pancake Rings

This was a big hit with the little girls I made them for.

Ella and Taylor are tracked out from school right now so I like to make them a special breakfast in the mornings.  I saw these pancakes on The Chew a few weeks ago and I knew that they would be a really big hit.  They were easy to make, too, so that made them even better.  Taylor actually asked me to make them again because she love the apples so much.

The apples cooked up really well  and the lemon zest and pumpkin pie spice in the batter gave the pancakes some great flavor.  We topped them with maple syrup, but they would be great with other syrups as well.   You could use any pancake batter here and the original recipe actually uses Bisquick’s pancake batter. These are a great fall treat for a cold October morning.  Enjoy!

Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ tsp lemon zest
  • ½ tsp pumpkin pie spice
  • 1 beaten egg
  • 1 cup milk
  • 2 tablespoons cooking oil
  • 2 medium apples pared and cored

Instructions
  1. Whisk the first 6 ingredients together for a few seconds. Then combine the beaten egg with the milk and oil. Add to the dry ingredients and whisk until all ingredients are thoroughly incorporated. You will still have some lumps.
  2. Slice apples crosswise into ⅛ inch slices. (I actually left the skins on, but the original recipe has you pare them.)
  3. Melt some butter or spray some Pam over a griddle using medium heat.
  4. Dip the apples into your butter using a toothpick. You may want to use a spoon to get the batter evenly distributed over the apples.
  5. Place coated apples onto the griddle and fry until lightly browned on each side.
  6. Serve with maple syrup or your choice of toppings.

Healthy things my kids love – homemade applesauce and Camelbaks

When there are healthy things that my girls really love, I tend to love them too.  Applesauce is something that my mother always made us growing up and now she makes it for the grandkids.  If you have never had homemade applesauce you are really missing out.  It’s nothing like the stuff you buy in a jar at the store.  Nothing.   It’s also easy peasy to make – which is why I love it even more.  The most tedious part of making it is running it through the food mill (or a strainer if you don’t have a food mill.)  Still, that’s not even very hard.

Here is another great secret about making applesauce.  Does your grocery store have marked down produce sitting off by it’s lonesome in shame in a dark corner?  Do you ever look at it?  Sometimes I’m like – Huh?  It usually looks perfectly good to me – and it usually is still fine.  It might not be at it’s peak, but if you slow cook it, roast it or grill it, very often you will never know the difference – cross my heart. Plus, it’s usually at least half the price of the regular priced fruit and veggies… So, when I want to make applesauce I head straight for this rack and grab several of the packs of fruit.  I will usually get more than just apples, too.  I am pretty sure you can  throw in any fruit that you can get your hands on.   The sauce in the picture actually has bananas (that were a bit overripe), pears and a peach.  The pear might give it a hint of grittiness, but the banana makes it a bit creamy. You could also add strawberries or even some mango – yum.

Another thing that my kids love are their Camelbak Mini M.U.L.E.’s  We like to go on hikes and ride bikes and we find that if we  keep the kids hydrated and fed throughout the trip they can pretty much keep up.  Jim always carries his own Camelbak and they love drinking out of it.  So, as they got a bit older we decided we would get them each their own.   It was actually a great present for Grammy and Grandpa to get them for the holidays.

Now when we go on hikes or bike rides they can get a drink when they would like and it’s easy for them to grab their own little snack.  They feel like explorers with them strapped to their backs and they each have their own cool colors (pink for Taylor and blue for Ella.)  They are a lot smaller than a regular backpack so you can’t store tons of stuff in it, but things like a snack, sunglasses and maybe a hat can all fit in there perfectly fine.  Plus, as most Camelbak products, they are made really well.  Now our hikes and rides last a lot longer and are much happier:-)

This is my oldest daughter, Ella with her Camelback.  We are at Duke Gardens and this is my birthday weekend.  I always choose to go here for my birthday:-)  It’s one of my favorite places.  Oh, by the way, don’t you love Ella’s color blocking??

So, back to this applesauce.  I should also tell you there is no need to add any sugar to it.  I might add some cinnamon or pumpkin pie spice, but other than that, its pure fruit.  If you have never made it at home – I urge you to try it.  Honestly, it just couldn’t be  easier to make and your kids will eat it like ice cream – I promise!

Crock-pot Applesauce

6-8 Apples – any variety you have

Cut and core the apples, leaving the skin on and throw into the Crock-pot

Add any additional fruits you want to try (pears, banana, peaches), but I usually have at least 50 percent apples

Cook on low for 6 hours

Let cool and run through a food mill or a mesh strainer to get rid of the skins.  Add cinnamon, nutmeg or pumpkin pie spice to taste.
